In referencing an edited book, does the author/editor of the chapter listed first then the year then the chapter then ... ?

The editor of the individual chapter was Flanagan. Would you instead cite it with the editor of the chapter first? I.e.

Finally, when I cite the source in the paper is it: (in Berzoff, et al., 2011)?

An edited book has the following components to the citation: the chapter authors, the date, the title of the chapter, the title of the book, location of publisher, and the publisher's name. In a general fashion it would look like this:
Author of chapter. (Date of Publication). Title of chapter. In editors (Eds.), Title of book (XX ed., pp. XX-XX). City of publication, State of Publication: Publisher.
Your example would look like this:
Flanagan, L. M. (2011). Theory of psychology. In J. Berzoff, M. L. Flanagan, & P. Hertz (Eds.), Inside out & outside in: Psychodynamic clinical theory and psychopathology in contemporary multicultural contexts (3rd ed., pp. 158-185). Lanham, MD: Rowman & Littlefield.
There are a couple of things to point out to you. First, when identifying the editors, notice that the first and middle inititials come first followed by the last name. Second, be sure to italicize the title of the book. Third, when adding the publisher information, give the name in as brief a form as possible. Omit superfluous terms such as Publisher, Company, and Inc. Retain words such as books and Press. For more information, see Section 6.30, pp. 186-187 of your APA Manual, 6th ed.
Within the body of your paper, your in-text or parenthetical citation (in parentheses) would cite whoever is in the author spot. In this case, Flanagan is in the author spot.
Your parenthetical citation would look like: (Flanagan, 2011).
Your in-text citation would look like this: Flanagan (2011)
