The short of it is you are citing a source cited in a source, and you don’t have the original source to cite (tongue twister!).
APA frowns on this. But we need to remember APA is a style designed for people submitting scientific papers to APA journals. It has been adapted by colleges for students, but it is not designed for students.

a). In your reference list, create a citation for the edited book that you have in hand.
b). In the text of your paper, cite and discuss the information you are taking from the edited book.
c). In your parenthetical reference, cite the edited book that you have in hand (matching it to your reference list).
